domenico-emilio-egizioMr. Domenico Egizio represents the third generation of his family bakers. In 1983 he started a workshop with wood stove for the production of sweet and savory products. By the time perceived the importance of identifying the product with its own brand, which led him to give life to the current activity “Farinella Bakery Biscuit”, adopting the logo of the carnival mask Putignano “Farinella”.

During these years, he has specialized in the production of bagels, snacks and Friselle, reserving a part for third parties.

Abroad, the product brand Farinella is placed in Romania, Germany, Switzerland, England, France, Spain, Belgium and Sweden.

Processing of products

All products Tarallificio Farinella are the result of the semi-artisan processing of natural ingredients and simple typical of Puglia : wheat flour , semolina , white wine , olive oil , salt and various spices .

The dough is long worked to ensure that all the ingredients will be mixed properly with one another and , before taking the form of bagels or Friselle or appetizers, it will be analyzed the appearance and especially the taste.

If not conform to the quality standards set we proceed with a new mixture .

The next step is forming, the process through which gives shape to the mixture which , in the case of tarallini will be subjected to boiling and baking in the oven , in the case of friselline and appetizers , after rising , will be subjected to a first partial cooking in the oven , then move to cooling, cutting and roasting , ending with the packaging after the product will be well cooled .
